One of our favorite food blogs Guilty Carnivore which is always a good read for those who like their food posts with a dash or two of politics ( I certainly do) a while back had a great recipe for a Scallop Ceviche which really rocks...
Of course you could always replace the Scallops with Ray or Skate wings cookie cuttered into scallop sized chunks which in a lot of places is what those scallops you buy might actually be!
However you make it... It works!
